Any one got any Quail recipes?....Got a good friend that's gonna give me a sack full next week....its been a long time sense i had me so Good Quail!!!....

Baked Quail

quail, usually 2 per person
salt and pepper
bacon strips
Worcestershire sauce
any favorite stuffing
1 c. bouillon or Chicken Stock/Broth


Split whole quail down back only. Salt and pepper birds and stuff with
favorite cornbread, giblet or rice dressing. Wrap a strip of bacon
around each bird and sprinkle with Worcestershire sauce. Bake in 350°
oven and baste frequently with bouillon or Chicken Broth. Cook 1 hour and 45 minutes to
2 hours.

4 Minute Quail

1 qt. buttermilk
flour
8 quail
salt and pepper
Soak quail for 4 hours in buttermilk. Drain. Coat with flour, salt and pepper to taste. Deep fry for 4 minutes.

Quail Casserole

10 to 12 dove or quail
1 can cream of mushroom soup
1 envelope dry onion soup mix
1/4 c. chopped celery
3/4 c. dry vermouth or white wine
1/2 c. water
pinch of Italian seasoning or oregano and thyme

Preheat oven to 325°. Place birds in casserole. Mix remaining
ingredients and add to casserole. Cover and cook for 2 1/2 to 3 hours,
turning and basting birds frequently.


You do not have to brown them and the gravy is delicious. Check after 1 1/2 hours; they
should be done. Serves 6.
